While starting the perfect steak for grilling there are a few items that come in handy to complete such a task, your first step is to choose the right steak for you, being your choice of course! I am going to use strip steaks to illustrate in this technique.

The technique for marinating is very simple when used with the Food Saver Vacuum Food Sealer with Smart Seal Technology and one of its accessories the Food Saver Quick Marinator 2.25, QUART Food Saver Quick Marinator is a 2.25 quart canister that vacuum marinates meat, vegetables and more in minutes and can also be used for convenient vacuum storage.

Quick Marinate,

1/2 cup Worcestershire sauce
1/2 cup soy sauce
1/4 cup rice wine vinegar
One tsp., liquid smoke.
One tsp., extra virgin olive oil.
One tsp., honey.
One tsp., crushed red chili.
Two large garlic cloves.

Method

· Combine and Worcestershire soy sauce, vinegar, liquid smoke, oil, honey and chili sauce in a jug.
· Now peel and crush the Two large garlic cloves
· Place a funnel into a sterilized bottle such as a wine bottle, Pour in marinade. Secure lid for tips on securing look below. Label bottle.

Notes

Dry Rub

· Three TbS. Salt
· Four tsp. Brown Sugar
· Four tsp. White Pepper
· Four tsp. Black Pepper
· Four tsp. Garlic Powder
· Four tsp. Onion Powder
· Four tsp. Lawry's Seasoned Salt
· Four tsp. Lawry's Garlic Salt

Method

· Combine Salt, Brown Sugar, White Pepper, Black Pepper, Garlic Powder, Onion Powder, Lawry's Seasoned Salt, Lawry's Garlic Salt together in your Kitchen Aid 5-Quart Stand Mixers bowel and mix on low for two min.

· Remove from bowl pour into a Ball Wide-Mouth Mason Canning Jar one Qt., using your recipe above follow Step seven from below.

· Remember to always label your jars.

Now for the step.

Step one: Place the steaks in a Food Saver Quick Marinator 2.25.

Step two: Pour some of the Quick Marinate from recipe above on each steak and spread it around with the back of a spoon. Use about a one tablespoon per steak, depending on the size of the steak; use enough so some will drip down the sides. The Quick Marinate will absorb into the steak.

Step three: Cover your FoodSaver Quick Marinator 2.25 Give it a minute or so to absorb into your steaks. You can now connect your Food Saver Vacuum Food Sealer with Smart Seal Technology and follow the instructions on the unit.

Step four: Now after you have done step three put them in the fridge for 10 to 20 min., or so while that is setting and chilling now would be a good time to go to step five.

Step five: Now you can take your bottle of Quick Marinate from recipe above and your Food Saver 3-pack Bottle stoppers to vacuum pack for longer shelf life, and put it away.

Step six: While you waited for your steaks to rest you may want to try the recipe below for the dry rub. Now you don't need the dry rub you can grill them right now, but better is better.

Step seven: now that your steaks have had time to rest and you have made you dry rub take your steaks out and use paper towels to remove as much of the Quick Marinate from recipe above, clean out your Food Saver Quick Marinator 2.25 now sprinkle each side of your steaks with the Dry Rub and return them to your Food Saver Quick Marinator 2.25 and repeat Step three.

Step Eight: Now you put them in the fridge for one hour or so before grilling, or you can grill them now.

For some reason the humble pie is something that every aspiring cook at home seems to have problems at one point or another. The most common problems are large cracks, burned up, lumpy fill, broke the centers and the cheesecake surprising contraction (pie shrinks around the outside).

These problems are eliminated first, if the cake is prepared and cooked properly. Here's how to prepare and cook what is sure to become a family favorite, homemade lemonCheesecake.

Before cooking, a bit 'of science, if you want. Most problems stem mainly from a cooking process correctly. This is usually because people treat it like the recipe for a cake. But the truth is, cheesecake is much more like a cream pie, how he became a regular cake recipe. This means that we must work, and cook the ingredients in a different way.

First, give the pan. Someone suggested to use a pan, but I do not like. TheReason will be clear when we enter the cooking process. Because now you are looking for a 9-inch round cake pan with high sides beautiful (at least 2 inches). First you need to be addressed in the pan, so you can then cooked cheesecake. This melt a knob of butter and a brush, coat the entire inside of the pan. Next, take it with parchment paper cut out a circle for the bottom of the pot and a long rectangle for the page. Once the parchment has been added to the pan, we can focus on the crust.

Somepeople like a cookie crumble crust but I prefer good old graham crackers. I take about 2 dozen and place them in a plastic ziptop bag. Using my fingers only, I crush them for about 30 seconds to a minute. Some big chunks are ok. Next, melt 1/4 cup of unsalted butter and add the cracker crumbs to it along with 1 tablespoon of sugar. Mix with a spatula briefly and add to the bottom of the pan. Next grab a heavy glass with a flat bottom or other tamping tool (the kind used to flatten meat works great). You want to tamp down all the crumbs in the pan so they stick to each other and help the crust form. Bake the crust blind for 10 mins at 300 degrees.

Next comes the filling. Before you started working on the pan preparation, you should have taken your cream cheese out of the fridge and set it on the counter to soften (at least 30 mins or so). We are also going to need 1.25 cups of sour cream, 1 cup of sugar, 1/3 cup of cream (whipping or heavy), 1 tablespoon of vanilla, 5 large eggs, 1/4 cup of lemon juice, the zest of one lemon, and 1 tablespoon of cornstarch (optional).

Now, the mixing of the batter is important. We want everything mixed well but we do not want to add any air into the batter. Air is usually the problem when a cheesecake falls or has a sunken center. So, the best tool in my opinion is the Kitchenaid stand mixer (or your favorite brand).

To start, place the sour cream in the mixing bowl and using the paddle attachment beat on medium low for a minute. Next add the cream cheese, the sugar and the optional cornstarch. The cornstarch acts to help slow down the binding of the eggs in the custard which prevents cracking. Think of it as a little extra insurance. If you follow this recipe you should not need it but if this is your first time trying this recipe, consider adding it.

So, now we beat this mixture on low speed for 1 minute. Then turn up the speed to medium for a few more minutes. Stop the machine and scrape the bowl. Next, in a container mix the 1/3 cup of cream, vanilla, 2 large eggs, 3 egg yolks, lemon juice and lemon zest. Mix this up well with a fork.

Turn the mixer on medium low speed and slowly drizzle in half of the cream and egg mixture. Stop the mixer and scrape the bowl again. Start it again but this time on medium high speed and add the remaining egg mixture. Continue mixing for about one more minute. The batter should be uniform (no lumps) and not airy.

Now, the baking. Preheat the oven to 250 degrees. Remember when we cooked the crust blind. Well, we want to add the batter to the pan but first make sure the crust is completely cool (let it cool out of the oven for at least 15 minutes). Add the batter to the pan. Give the pan a few little twists left and right to help any air bubbles come to the top.

At the same time, boil at least 2 quarts of water (the amount will depend on your pan size). You need to create what's called a "bain marie" (Marie's bath). If you have another cake pan that is a few inches bigger in diameter use that. If not, a disposable aluminum baking dish works well too (the kind for lasagna or roasting). Add a clean towel to the bottom of the large pan and insert into the oven. Add the cheesecake pan into the larger pan and gently push it to the side. Now, carefully add the boiling water into the larger pan. Pour enough to come up 2 thirds the way up the cheesecake pan.

Now, gently center the cheesecake pan in the larger pan and close the oven. Bake at 250 for an hour. Here's the hard part. After an hour the cake will not looked cooked. But the problem is we don't want to overcook the cheesecake. So, open the oven door for about 30 seconds to let some heat escape. Next, close the door and leave the cake alone for another hour. After that, carefully take the cake pan out of the water pan and place it in a fridge for 6 hours.

Finally we have cheesecake. There are some minor acrobatics necessary to get the cake out of the pan. First, fill your sink half way up with hot water directly from the tap (the hottest it will go). Next, let the pan float in the sink for 15 seconds. Now remove it and place it on a towel. Using a sharp thin knife gently trace around the outside of the pan and then carefully remove the parchment from the side of the pan. Now, take some wax paper and cut a circle the same size as the cheesecake. Place the wax paper on top of the cheesecake. Place a round plate or the bottom from a spring form pan on top of the cheesecake and carefully but quickly invert it. Next remove the pan.

Ok, but now you are looking at the bottom of the cheesecake. Remove the parchment from the bottom. Decide what plate you will use to serve the cheesecake (or select a nice size bakers cake round). Place that on the bottom of the cheesecake and once again invert it carefully. Lastly, remove the wax paper from the top and cut your cheesecake.

If all went well you should have a delicious and beautiful lemony cheesecake that your friends and family will thought you bought. And you know what, if the top does crack, who cares. That's why they invented whipped cream.

Parsnips have a nutty, peppery, sweet flavor that you just won't find in any other veggie. They are good pretty much any way that you want to make them: roasted, baked, fried, sautéed, mashed, and they are awesome in deserts (a lot like it's cousin the carrot).

Parsnips have historically been the favored vegetable for Europeans over carrots and potatoes. They were introduced to America in the late 16th century but sadly come in a dismal third to carrots and potatoes to the American taste buds. Parsnips are a root vegetable, resembling a creamy white carrot but are considered far more nutritionally superior. They are beneficial for lowering cholesterol and loosing and maintaining a healthy weight. They are low in saturated fat, sodium, and cholesterol. They are high in dietary fiber, Vitamin C, Vitamin K, Folic Acid, Manganese, and Potassium.

Parsnips are at their best in the winter after the first frost - the cold turns their starch into sugar which gives them their sweet flavor. They are available at your grocer from late fall through early spring - so, for many of you out there, it's prime time for parsnips in your area! When you get your parsnips home from the store, it's best to wrap them in a moist paper towel and store in a dark location in your fridge. They will keep for two weeks or longer, making them an ideal vegetable to buy in bulk!

I have 3 Parsnip Side Dishes and 1 Parsnip Dessert that I absolutely LOVE and I'm going to share them here with you today. Of course, I cook all my food on stainless steel bake ware and waterless cookware, if you need any adaptations to these recipes, feel free to email me anytime! I hope you enjoy these special Parsnip recipes as much as my friends, family, and I do.

Parsnip Au Gratin
Saute ½ Cup of chopped Organic Hazelnuts (could also use Pine Nuts) in the 8.5" Saute pan on Medum heat until the nuts are aromatic; set aside. Prepare 4-5 thickly sliced Organic Bacon strips - chopped. Saute in 8.5" Saute pan on medium heat until golden brown; transfer the bacon to a large mixing bowl, reserving the drippings in the saute pan (turn the burner off). Peel and slice 2 lbs Medium Organic Parsnips on the Master Kut using the #4 cone and grate 1 Cup of fresh Organic Parmesan Cheese on the #1 Cone (set the cheese aside for later use). Mix the parsnips with the bacon and ¼ cup of the Hazelnuts. In a second mixing bowl, combine 2 cups Organic Whipping Cream (can sub with whole or 2 % milk), 1 Cup low sodium Chicken Broth, 1 ½ tsp Kosher Salt, 1 tsp freshly ground Organic Black Pepper, and ½ Cup of the Parmesan Cheese. Add the bacon drippings to the bottom of the large skillet. Arrange ½ of the parsnip mixture in the skillet. Top with half of the cream mixture and sprinkle w/ 1 TBSP of Organic Sage; repeat this layer. On the very top, sprinkle with the remaining Parmesan Cheese and the other ¼ cup of toasted Hazelnuts. Cover, whistle open, and cook on medium heat. When the whistle sounds, turn the whistle valve to "V" for vent and turn the burner to low. Cook on low for 10 minutes and turn the burner off. Allow to stand, covered, for 10-12 minutes to set up.

Mashed 1/2 & 1/2
Peel and cube 4 large Organic Golden Yukon Potatoes and 6 medium Parsnips. (you could also use all parsnips - you would need 2 ½ - 3 lbs). Combine in the 4 qt saucepan with 2 Cups of Low Sodium Chicken Broth. Cover, whistle open, and cook on medium heat. When the whistle sounds, turn the whistle valve to "V" for vent and turn the burner to low. Allow to cook 12-15 minutes longer or until tender. Meanwhile, heat ½ Pint of Organic Cream (could also sub any % milk that you wish) & ½ Cup Organic Butter in the 1.5 qt saucepan on low heat until the butter is melted and the cream is heated through. Cover, whistle closed, and set aside until the potato/parsnip mixture is ready. Mash the potato/parsnip mixture with a hand masher or electric mixer on low speed. Slowly add the cream mixture until smooth. Season with salt and pepper to your taste. For an extra kick, you could add 2-3 tsp minced Organic garlic if you like.

Herb Roasted Parsnips
Peel and cube 2 lbs Organic Parsnips into bite size pieces. Dice 1 Organic Sweet Yellow Onion and mince 4 Organic Garlic Cloves; toss together with the parsnip until well combined. Toss the mixture with ¼ Cup of freshly chopped Organic Basil, 2 TBSP fresh Organic Rosemary sprigs, and ½ to 1 packet of Organic Onion Soup Mix (use according to you tastes - the brand I use is "Simply Organic"). Toss the entire mixture with enough Organic Extra Virgin Olive Oil to coat well. Spread out on a large baking sheet. Bake at 350 for 35-45 minutes, turning frequently, until the parsnips are tender. Serve with your favorite meat or as an addition to a vegetable plate.

Parsnip Ginger Spice Cake with Cream Cheese Frosting
Grate 1 Medium Parsnip and ½ Small Zuchinni using the Master Kut with the #1 Cone. Grate 1 TBSP Fresh Organic Ginger. Prepare 1 Cup of Chopped Walnuts, set aside. Mix 1 Box of Organic Spice Cake Mix, ½ Cup of Chopped Walnuts, 2 TBSP Purple Raisins, 2 TBSP Golden Raisins, ¼ tsp Organic Nutmeg, ¼ tsp Organic All Spice, and ¼ tsp Organic Ground Cloves until well combined. Add 2 large Organic Eggs, 1 ½ tsps Vanilla extract, 1/8 Cup of Water, the vegetables and the ginger to the cake mixture. Mix until thick and gooey. Spray the large skillet with non-stick spray and add the cake batter to the skillet. Cover, whistle turned to "C" for closed and bake on medium heat for 10 minutes. Reduce the temperature to Low and cook for an additional 10-12 minutes or until the center is cooked through. Meanwhile, make your frosting. In a medium mixing bowl, cream together 8 oz of Organic Cream Cheese and ½ Cup Organic Butter. Add ½ tsp of Organic Vanilla Extract and 2 Cups Organic Confectioner's Sugar; blend on a low speed until smooth and creamy. When the cake is done. Flip it out onto a serving platter
